    I know we have all just got over all of this, and would rather forget about winter, but......

    Fondant left over after winter, can it be frozen and reused next year?

    Unused fondant in the box/bag will be fine in a coolish place. I have several which I haven't needed. The stuff left over on the top of the hive ought to be OK too if wrapped to stop it drying out. Small bits I've just thrown out. Bigger bits I might be tempted to use for syrup through the summer, maybe dropping into hot water to help sterilise to avoid setting off fermentation.
